Tapenade Olives AOP Nyons 90g


Tanche is a variety of black olive specific to Nyons area. From December, they are picked when they are fully ripe, slightly wrinkled by the first cold spells and the dryness of the air. The olives are then calibrated and sorted.


During the harvest, the natural bitterness of the olive has decreased and is completely removed by ancestral natural processes: immersion in brine, a mixture of water and salt, for a minimum of six months.


Finally, we use the pulp of the olives and add it some herbs and anchovies to create our Tapenade.


To taste as an aperitif or cooked with vegetables, fish or white meat.
